I came accross a chicken baby food recipe whilst experimenting with a few ingredients, I am struggling for tasty baby food recipe ideas at the minute. Thomas absolutely loves pasta bolanaise and cottage pie, so I thought I would bring a tomato base into a chicken recipe – Thomas loves tomatos and my own take on a tomato chicken risotto is tasty and really healthy. I thought I would share my new found receipe with the world in hope that it may inspire some of my readers.

Ingredients:
Chicken
Tinned tomatoes
Onion
Garlic
Spinitch
Brown rice

Method:
Cut the chicken up into chunks and dry fry in a pan with the diced onion add a tin of tinned tomatoes. Add a few cloves of garlic and fresh spinitch washed and storkes removed. Allow all the ingredients to simmer, at the same time rince some brown rice and bring to the boil in a saucepan after around 25mins drain the rice and add it to the tomato chicken dish. I presume it woud be ok to actually cook the rice in the chicken dish all together also.

When everything is cooked allow to cool before blending to your desired consistency and freezing seperate batches. The brown rice and spinitch are particulary good for baby providing them with essential vitamins and minerals.

Thomas loves this recipe I plan to make some more soon as he has almost finished the frozen batches. I am glad that Thomas is still enjoying his mashed food off the spoon, although I know this won’t last for long. Some of the mums I speak to with babies similar age to Thomas say that their little one’s want to eat finger food all the time, they don’t like being spoon fed and they certainly don’t like mashed up food! I keep trying to think of healthy finger food ideas, I don’t want to give him things like chicken pieces and chips. I would like to make healthy foods for as long as possible, I think I need to read up on some healthy home made finger food meals.

Do any of you mums out there ever feel a little trapped from time to time? Like your new role as a mother has taken over who you was before you had your baby? As much as I absolutely love being a mum and spending as much time as possible with my son taking him to mums and tots, swimming, singing etc all this has taken over the things I used to do, I used to go to the gym go swimming, take more pride in my clothes and how I looked. How I look is an after thought these days, I get thomas in his buggy all covered up ready to go out, then I run upstairs and get changed throwing a comb through my hair last minute. I’m sure I’m not the only one who feels like this from time to time.

I find that the key is to keep busy during the day and not to dwell on things, we usually go out first thing then when we get back home I am busy sorting Thomas some toast -Cleaning up, then a couple of hours later its lunch time, after which Thomas will have a nap then its more play and some fresh air. I go out to work a couple of days a week, this gives me the opportunity for some adult convesation and a work environment. Thomas spends quality time with his Grandmas while I renew my touch with humanity :-) I see work as a break something I never used to do before having a baby,

I often think to myself that when Thomas goes to bed at 7pm I should try to do something to get the old me back. But by the time I have made tea and cleared away I am too tired to go out and do anything the sofa is too inviting. I know I will eventually get to be my old self again, its just a matter of time – Last week it got to me a little but this week I am totally fine with things. I suppose all us new mums have our up’s and down’s its part of being a parent.
